Amedei developed its Cru range of bars from single plantation cacao in an effort to showcase the archetypal flavours that come from different provenances and origins. In this particular case we have a Venezuelan trinitario variety which has 85% of its genetic material made up of criollo genetics. Amedei are particularly famous for their Venezuelan cacao, producing bars made from Porcelana, Chuao and blanco di criollo, all of which have received high acclaim. This bar however, represents maybe not the nuances of a particular estate, but more the nuances of the Venezuelan origin, an origin famous for intense chocolatey notes alongside nutty flavours and a developed sweetness with very little bitterness. This bar is designed to be the best possible introduction to Venezuelan cacao, rather than perhaps a shining light in its own right.
My expectations for this bar were fairly simple, I expected a Venezuelan stereotype, intense chocolate, nuts, caramel and my hope for this bar was that it would express these attributes clearly, as well as displaying the attributes of artisanal processing. I’ve had Amedei’s Porcelana before, which is super smooth, so it’s clear that Amedei have certain skills in the processing of cacao into bars, so I had high expectations here. Upon trying the bar it was a lot of what I expected, the aroma was of intense chocolate and chocolate fudge, the flavours were pretty familiar intense, chocolatey, fudgey, bags of roasted nuts and a minimal citrus acidity. The processing also lived up to my expectations, the bar was smooth and silky, it had a great finish and was really well developed. For anyone looking to find out what Venezuelan chocolate is like, I wouldn’t hesitate to recommend this bar, for those that are passionate about Venezuelan chocolate however, this bar has very little extra to offer you, except a masterclass in how to turn high quality beans into high quality bars.

There is good depth and dimension of flavour, structure is uniform, but expression is archetypal and bar lacks complexity
