Chocolat Bonnat Venezuela Puerto Cabello 75% 88/100

From the northern coast of Venezuela, west of Caracas in the province of Carabobo, with its Parque Nacional Henri Pittier neighbours to the east, Puerto Cabello provides the shipping port for its neighbouring cacao farmers. ‘With a wealth of history’, I could be talking about the origin or the chocolatier, both being instrumental in bean to bar production. I’m inclined to expect a traditional north coastal Venezuelan cacao again here, having tried some of Chocolat Bonnat’s bars before and this would meet their profile. I am expecting one thing for certain and that’s smoothness, all of their bars so far have been super smooth. and this seems a major part of their style. Upon opening the bar it’s immediately obvious that I’m dealing with some high quality production values again, but interestingly theres a complex fruity and spicy aroma that I wasn’t expecting. To follow there’s a wonderful mix of refined pink fruit notes and hints of peppery spice. This is a refined and elegant bar, its nature is soft and delicate, although it does definitely contain spice flavours to provide some more interesting heat. Mostly the bar revolvess around some light pink flavours laid out on a wonderfully smooth and consistent mouthfeel. For those with a preference for something lighter and more elegant this bar fits the bill, I would have just liked a little more sparkle. No doubt this would pair well with some pink cava.

Flavours are softer and floaty, but still have some carry lasting just short of a full round

Quality: finish floats away, mostly clean a little lingering cocoa in the background

Flavours and style of attributes are complementary working together to make the bar, structure is medium/light allowing flavours breathing room

Overall 8.5/10

Bar offers individual expression, one of lightness, elegance and refinery, there is dimension in the flavour, but bar lacks depth and some roundedness, structure is uniform but refrains from pinning the bar down, flavours are developed but don’t feel pushed or stretched

Chocolat Bonnat’s Tasting Notes: Very fine and tonic, it perfumes the palate for a long time.
