This dark milk bar is made using beans from Ghana. Once harvested these beans are shipped to the Reinickendorf borough of Berlin where they are processed by Moser Roth. I’ve had a few Ghanaian dark milk chocolate bars now and I get the impression that much like Brazilian coffee, for now, Ghanaian cocoa beans are favoured for combining with milk. The two both tend to encourage robust caramel flavours by combining their dark chocolatey nature with milk to create something which is sweet, archetypal and accessible. I say for now, because much like Brazilian coffee, both origins and their use for milk seem to be diversifying their quality and flavour profiles to offer something more individual and interesting as a single origin. In this particular case though I expect something of the former, a bar that expresses sweet, creamy, caramel flavours and my hope is that it can maintain a balance and roundedness to its flavour. Opening the bar I’m greeted by a simple set of Moser Roth slabs, presenting a strong milky confectionary aroma. Placing a piece in my mouth, I’m not surprised by the colour to find a quicker and more malleable melt, with a creamy confectionary mouthfeel. To taste this bar is nearly more similar to white chocolate than it is to a dark milk – a look at the packaging afterwards reveals maybe unsurprisingly more cocoa butter than cocoa mass here – it’s reminiscent of a milky bar or the chocolate buttercream used to fill cakes. There’s a subtle range to the flavour and in fairness I would have scoffed this down as a child, but in general, while this features some acidity, length and balance this chocolate’s general tone is one of good confectionary rather than honest cocoa expression. Buttery and creamy flavours offer a lactic slant to the acidity and flavours changing it from the usual caramel tones to something fruitier and more like syrup. This isn’t an earthy chocolate tempered by milk, more this is an inherently buttery and milky bar that’s sweeter than it needs to be to provide balance. Fans of white chocolate might very well appreciate this bar and if you’re looking to improve the flavour of your baking this might be a great ingredient, but in terms of single origin cocoa expression, a bar with a higher cocoa mass percentage might be more appropriate.
